Craft and Activity Ideas


Here is a recipe we invented recently to whet your appetite. A delicious pudding, sweet, but sugar free, so perfect for children. If you make these yourselves we would love to hear how they turned out, so please fill in our CONTACT FORM.

Raspberry Volcanoes

Serves 5 (or 4 generous portions)

Ingredients:
about 120g frozen or fresh raspberries
45g butter
90g plain flour
large pinch of baking powder
1 egg
about 100ml concentrated apple juice
1 large tbsp natural yoghurt

Method:
Melt the butter in a small pan.
Divide the raspberries between five ramekin dishes, there should be enough to cover the bottom of each ramekin.
Drizzle one generous teaspoon of concentrated apple juice over the raspberries in each of the dishes.
You should have about 4 or 5 tbsp of concentrated apple juice left. Combine this with the rest of the ingredients in a small bowl and beat until well combined.
Dividing equally between the ramekins, spoon the cake mixture over the raspberries.
Bake in the oven at 180C for about 20 mins or until a toothpick inserted in the cake comes out clean. When they are done the raspberry juice will come bubbling through the top of the cake like the lava in a volcano. Children will love to see them bubbling as they come out of the oven, but keep them at a safe distance.
If serving straight away spoon the cakes out of the ramekins for children, as the dishes will be very hot. Otherwise leave to stand for 10 minutes before serving.

You can experiment by substituting another soft fruit for the raspberries. And another sort of concentrated juice would also work just as well. I made mine with concentrated date juice the first time. Golden or Maple syrup would work equally well although you might only need 3 tbsp for the cake mix.
